Bon Broth
Bon Broth is a premium hotpot restaurant by acclaimed Chef André Chiang, located at Raffles City in Singapore. This innovative concept marries French culinary techniques with Asian flavours, offering a refined individual hotpot experience.  
Each broth is meticulously crafted, starting with a sautéed mirepoix base infused with Chef André’s signature spice paste, then deglazed with a French-style bouillon simmered for 12 to 16 hours using fish, beef, pork, or chicken bones. This process results in rich, collagen-infused broths that are flavorful from the first sip, eliminating the need for additional condiments.  
The dining experience includes a visit to the “broth bar,” where a broth sommelier guides guests through tastings to help select their preferred flavour. Meals are served as individual sets: the Deluxe Set at S$110++ and the Premium Set at S$138++, featuring a selection of seafood, meats, and vegetables. Notably, the restaurant offers a complimentary deshelling service for shellfish, enhancing the dining experience
